The meat industry faces crucial challenges, such as the guarantee of quality and food safety, compliance with health regulations and the growing demand for transparency by customers and consumers. Traceability is a key element to address these challenges, since it allows the tracing of each meat product from its origin, ensuring its integrity and facilitating the identification and resolution of possible problems, in addition to giving added value to the processing tasks, allowing them to be optimized and obtaining a higher quality product.
In this presentation we will give examples of real applications of how we are mapping out the product, especially in the case of ham, to ensure a higher quality final product and how we relate this data to the ERP or customer database.
